Cherry Coffee Cake


  • 4 eggs
  • 1 cup of sugar
  • 1 cup of vegetable oil
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 2 cups of all-purpose flour
  • 1 can of cherry pie filling
  • Heavy Whipping Cream for serving (optional)

Cinnamon Sugar Topping

  • 1 T sugar
  • ½ tsp. cinnamon


Preheat the oven to 350 degrees.

In a large bowl, add all of the dry ingredients.

With a handheld mixer, add the oil and one egg at a time until the mixture is fully incorporated (several minutes).

Note: the mixture will be very thick. Grease a 13” x 9” cake pan or glass dish with oil.

Spread a little more than ½ of the cake batter in the bottom of the pan with a rubber spatula.

Drop spoonfuls of cherry pie filling on the cake batter leaving a few areas uncovered.

Drop spoonfuls of the remaining cake batter over the top of the cherry pie filling.

In a small dish, mix together the cinnamon and sugar and sprinkle over the cake.

Bake for 35-40 minutes or until light brown. Let cool for a few minutes before serving.

Serve warm with a drizzle of whipping cream.
